b'T e mpt i n gT ate rsPotatoIngredients: Breakfast 3-4 med. potatoes, diced (about 2 1/2 cups) Squares 1/4 med. onion, diced small 2 Tablespoons butter 4 slices of bacon, cooked and crumbled 1/2 cup cottage cheese 1 cup grated mild Cheddar cheese 5 eggs 1/2 teaspoon salt 1/4 teaspoon garlic powder 1/4 teaspoon black pepperDirections:Preheat oven to 400 degrees F. With cooking spray, spray a 8 x 8 baking pan.Set aside.In a medium skillet, cook the potatoes and onions in the butter for 13-15minutes until the potatoes are lightly browned.Combine the remaining ingredients in a large bowl. Mix well. Add the potatoes and onions to bowl and mix to combine. Pour all ingredients into the greased baking pan.Bake for 15 minutes at 400 degrees F. and then reduce heat to 350 degrees F. and bake an additional 15 minutes or until eggs are set.Remove from oven and let set for 5 minutes.
