b'T e mpt i n gT ate rsMashed PotatoIngredients: Casserole5 pounds potatoes, peeled and cubed3/4 cup sour cream1/2 cup whole milk3 Tablespoons butter1/2 teaspoon salt1/4 teaspoon black pepper3 cups shredded cheddar cheese, divided4 slices of bacon, cooked and crumbled4 green onions, chopped, dividedDirections:Preheat the oven to 350 degrees.Place the potatoes in a large pot and cover with cold water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes until potatoes are tender.Drain potatoes and place in a large bowl. Add the sour cream, milk, butter and salt and pepper. Mix with an electric mixer on medium speed until light and uy. Stir in the bacon, 2 cups of the cheddar cheese, and half the green onions.Grease a 3 quart casserole baking dish. Transfer the potatoes to the baking dish and level the potatoes to an even layer. Top with remaining cheese.Bake, uncover for 30 minutes or until heated through and cheese is melted.
