b'T e m p t i n g T atersGravy Stuffed Ingredients: Mashed Potato Bombs 3 cups leftover mashed potatoes 1 cup beef gravy 1/2 cup grated Cheddar cheese 3 strips of bacon, cooked and chopped 3 eggs, beaten 1 cup all purpose our 2 cups seasoned bread crumbs 1 lb. (16 oz.) all vegetable shortening parsley, garnishDirections:Pour the gravy into ice cube trays and freeze until solid, about 1 hour.In a large heavy bottom pot or dutch oven, preheat the shortening to 350 degrees.In a large bowl, mix the potatoes, Cheddar cheese and bacon until combined. In three separate bowls, put the our in one bowl, the eggs in another bowl and the bread crumbs in the third bowl.Scoop up a small handful of potatoes in your hand and atten slightly. Put a frozen gravy cube in the center. Form the potatoes around the gravy cube. Continue until all potatoes are gone. This will make about 10 - 12 balls.One at a time, roll the potato balls in the our, then the egg mixture and then the breadcrumbs and put on a clean sheet pan to rest until all potatoes are coated in breadcrumbs.Carefully drop three to four potato balls into the oil. Fry for about two minutes then ip over and fry for another two minutes or so. Tranfer to a sheet pan lined with paper towels. Sprinkle with the parsley.22 POTATO GROWER APRIL 2019'
