A P R I L 2 0 1 7 POTATO GROWER 17 Tempting Taters Twice Baked Potatoes & Potato Chip Chicken Strips Preheat over to 350 degrees. Pierce the potatoes and rub them with the canola oil. Place on a baking sheet and bake for 1 hour or so until they are cooked through. Remove potatoes from the oven, set aside. Slice the butter into pats and place in the bottom of a large bowl. Add the onion, sour cream and most of the bacon. With a sharp knife, cut each potato in half length- wise. Scrape out the inside of potatoes into the bowl with butter mixture, being careful not to tear the shell. Leave a small rim of potato intact for support. Lay the hollowed out potato shells on a baking sheet. Smash the potatoes into the butter mixture. Add the cheeses (save a little for the top), milk, seasoned salt, and pepper and mix together well. Fill the potato shells with the potato mixture. Top each potato with a little more cheese. Place the potatoes in the oven for 20 to 25 minutes until warmed through. (Put the potatoes back into the oven at the same time as the chicken strips so they come out of the oven at the same time.) For the chicken strips: In a shallow bowl, combine the sour cream and seasonings. In another shallow bowl put the crushed potato chips. Dip the chicken into the sour cream mixture, then put in with potato chips, pressing to coat. Place chicken on a greased baking sheet and drizzle the melted butter over each chicken strip. Bake at 350 degrees for 25-30 minutes or until chicken is no longer pink. Serve with salsa or honey mustard sauce. Crumble remaining bacon and scallons over top of potatoes and serve.
